Winemaking

  • Mechanical harvest to capture optimal ripeness
  • Alcoholic fermentation in thermoregulated stainless steel vats for 2 to 3 weeks
  • The characteristic sparkle develops during the second fermentation in the bottle (methode traditionnelle)
  • Maturing on lees for 30-36 months minimum to refine the bubble before being cleared (removal of the remaining yeasts in the bottle).

Tasting note

This pale pink sparkling wine “methode traditionelle” brut, has nice nose with aromas of red fruits and citrus fruits. The mouth is full of flavor and fresh, accompanied by notes of red fruits and pink grapefruit. The finish is elegant, long and well balanced.

It will be perfect for your salty dishes: aperitifs, grilled fishes, or spicy dishes as well as sweet dishes like red fruit mousses or sorbets.
