A reference to the chateau’s quarry as well as the vines’ subsoil, this range of three wines is representative of the climats located near the quarry. these wines are particularly elegant and well-balanced. The grapes are selected from plots with a very distinctive feature: poor soils with the limestone bedrock breaking through on the surface. the result is a delicate red wine, a well-balanced and fresh white wine, and a lovely light white sparkling wine.
Our ‘Quarry’ collection is an ode to the very essence of Château de Sours, drawing its inspiration from our storied quarry. As we transition to organic viticulture, our focus sharpens on each individual plot to harmonize the soils and vines, all meticulously hand-harvested. The cool, oceanic climate caresses our North and North-East facing plots, rooted in predominantly clay soils. In winemaking and ageing, our philosophy is one of minimal intervention, allowing the grapes’ inherent qualities to shine. Each batch is fermented slowly and gently, a nod to the enduring legacy of our quarry, capturing unique sensory expressions and aromatic depth.
