Château de Sours did not opt for a famous architect for the design and construction of its new winery, the owner preferring instead to go for functional and practical state-of-the-art technical facilities to facilitate the production of the finest possible wine. The vat room is adaptable and can be used for single plot vinifications while respecting the vineyards’ identity. It provides the precision required for the definition and crafting of the wines. The project was launched in December 2020 and was completed less than two years later. The new winery brought in its first harvest in 2022.

All the winery’s technical equipment is aimed at preserving the quality of the grapes obtained in the vineyards: latest-generation optical sorting, temperature control of the harvested grapes as well as the vinification process, quality control on the white and sparkling wines coming off the wine press, etc. the wide variety of vats and tanks available enables the winery to manage a large number of plots individually and carry out a careful vinification of small batches representative of the estate’s different climats. the ageing process also takes advantage of the same wide variety of receptacles to optimise the quality and profile of the wines, and includes, in addition to the traditional barriques bordelaises, the use of foudres and amphoras.

The high calibre of the technical equipment enables multiple vinification strategies to be utilised: flexibility, agility and precision are the keywords at the estate today. quality is also achieved by carefully controlling all the production processes including the wine’s packaging and packing which are carried out on-site. from the vineyard through to the warehouse, all these demanding requirements have just one single objective: to create the finest possible wine in an approach that is intrinsically «vigneron».
